The role of a koshimbir in a traditional meal may be small but is far from insignificant. It carries out the act of creating balance. Koshimbirs, often served chilled, counter the heat of curries or simply add a fresh crunch to otherwise mundane meals.
At Paisley, we love our koshimbirs. They give us a chance to play with seasonal ingredients and present them in their freshest form. The fresh radish from the farm makes for a great side salad in the winters, while our dry shrimp koshimbir or raw papaya salad are constant throughout the year.
We love pairing a good koshimbir with a hearty curry rice combination; or just starting a meal with some koshimbir and papad (like chips and salsa) is always a good idea.
